With or without a corkscrew ?
First, you need to know if you want a 1 piece Laguiole knife (single knife with blade)
or a 2-piece Laguiole knife (knife with blade and corkscrew).
The original Laguiole knife was a simple knife with blade. Purists often prefer this version because the shape of the Laguiole knife is preserved with purity.

Historically, the corkscrew was added to the knife around 1880 following the move to Paris of the Rouergats to work as lemonade makers.

The size of the Laguiole knife.
It is possible to choose several knife sizes ranging from 8 to 14 cm.
Please note that the size mentioned represents the size of the closed knife.

A 10 cm Laguiole knife will have a handle of 10 cm, a blade of 8.4 cm and therefore a total size of 18.4 cm
A 12cm Laguiole knife will have a 12cm handle, a 12cm blade, a 10cm blade and a total length of 22cm.

The 10 cm knife will often be used as a pocket knife. It is often associated with a more feminine knife.

The usual size is that of the 12 cm knife. This is an ideal size for use as a table knife.

Finally, larger sizes are for larger hands!!
