With or without a corkscrew ?
First, you need to know if you want a 1 piece Laguiole knife (single knife with blade)
or a 2-piece Laguiole knife (knife with blade and corkscrew).
The original Laguiole knife was a simple knife with blade. Purists often prefer this version because the shape of the Laguiole knife is preserved with purity.

Historically, the corkscrew was added to the knife around 1880 following the move to Paris of the Rouergats to work as lemonade makers.
