The wind sweeps through the alleys, winter settles in for a long time, and stone dominates the horizon. Yet, from this austerity has emerged a strong, deep-rooted identity.  <\/p><hr data-start=\"487\" data-end=\"490\"><h2 data-start=\"492\" data-end=\"526\">The origins: the small church<\/h2><h2 data-start=\"492\" data-end=\"526\"><a style=\"background-color: #ffffff; font-size: 14px;\" href=\"https:\/\/laguiole.com\/wp-content\/uploads\/2026\/02\/Eglise-Laguiole-village.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"wp-image-50476 alignright\" src=\"https:\/\/laguiole.com\/wp-content\/uploads\/2026\/02\/Eglise-Laguiole-village-540x360.jpg\" alt=\"\" width=\"292\" height=\"195\"><\/a><\/h2><p data-start=\"528\" data-end=\"793\">The name Laguiole comes from the Occitan <strong data-start=\"570\" data-end=\"587\">&#8220;La Gleisola&#8221;,<\/strong> meaning <em data-start=\"600\" data-end=\"618\">the little church<\/em>.<br data-start=\"619\" data-end=\"622\">Over the centuries, this modest relief church became the main church in the area. The village formed around her, grouped together, pressed against the winds of the plateau. <\/p><p data-start=\"795\" data-end=\"853\">We pronounce <strong data-start=\"811\" data-end=\"823\">here &#8220;La\u00efole&#8221;,<\/strong> according to the language of the past.<\/p><p data-start=\"855\" data-end=\"1206\">Since the Middle Ages, Laguiole has lived by the rhythm of the seasons:<br data-start=\"909\" data-end=\"912\">breeding, fairs, exchanges. The great mountain fairs attracted merchants and peasants. They were reputed to be lively \u2014 to the point that the famous <strong data-start=\"1074\" data-end=\"1099\">&#8220;justice of Laguiole&#8221;<\/strong> was evoked, the white alisier (<em data-start=\"1137\" data-end=\"1147\">drelhi\u00e8r<\/em>) fairground stick that sometimes settled disputes in an expeditious manner.  <\/p><hr data-start=\"1208\" data-end=\"1211\"><h2 data-start=\"1213\" data-end=\"1250\">Land of livestock farming and transhumance<\/h2><h2 data-start=\"1213\" data-end=\"1250\"><a href=\"https:\/\/laguiole.com\/wp-content\/uploads\/2026\/02\/VACHES-AUBRAC.jpg\"><img decoding=\"async\" class=\"alignright wp-image-50477\" src=\"https:\/\/laguiole.com\/wp-content\/uploads\/2026\/02\/VACHES-AUBRAC-540x294.jpg\" alt=\"\" width=\"301\" height=\"164\"><\/a><\/h2><p data-start=\"1252\" data-end=\"1544\">Laguiole is inseparable from cattle breeding.<\/p><p>  For centuries, herds of Aubrac cows have been moving up to the summer pastures during transhumance. The burons, built of stone and topped with slates, punctuate the pastures. Cheese was once made there in the solitude of the heights. <\/p><p data-start=\"1546\" data-end=\"1686\">Even today, Laguiole cheese perpetuates this ancestral cheese tradition, a symbol of a know-how transmitted with consistency.<\/p><hr data-start=\"1688\" data-end=\"1691\"><h2 data-start=\"1693\" data-end=\"1725\">1829: Birth of a knife<\/h2><h2 data-start=\"1693\" data-end=\"1725\"><a href=\"https:\/\/laguiole.com\/wp-content\/uploads\/2026\/02\/couteau-laguiole-histoire.jpg\"><img decoding=\"async\" class=\"wp-image-50491 alignright\" src=\"https:\/\/laguiole.com\/wp-content\/uploads\/2026\/02\/couteau-laguiole-histoire-301x360.jpg\" alt=\"\" width=\"198\" height=\"237\"><\/a><\/h2><p data-start=\"1727\" data-end=\"1796\">But the history of Laguiole took a decisive turn in the nineteenth century.<\/p><p data-start=\"1798\" data-end=\"2015\">In <strong data-start=\"1801\" data-end=\"1809\">1829<\/strong>, a folding knife appeared in the village for peasants.<br data-start=\"1874\" data-end=\"1877\">It is inspired by the <strong data-start=\"1893\" data-end=\"1912\">Spanish Navaja<\/strong>, brought back by seasonal workers who went to work in Catalonia, and the local knife, the <strong data-start=\"1999\" data-end=\"2014\">Capouchadou<\/strong>.<\/p><p data-start=\"2017\" data-end=\"2072\">From this encounter was born a slender and slender silhouette.<\/p><p data-start=\"2074\" data-end=\"2381\">Little by little, the Laguiole knife became the emblem of the village.<br data-start=\"2134\" data-end=\"2137\">Its chiseled spring, often decorated with a bee, symbolizes precision and quality of work. They are called <strong data-start=\"2578\" data-end=\"2590\">bougnats<\/strong>. <\/p><p data-start=\"2593\" data-end=\"2819\">They often start by selling coal, then open cafes and breweries. birth of French know-how<\/h1><p data-start=\"388\" data-end=\"642\">The <strong data-start=\"391\" data-end=\"414\">Laguiole knife<\/strong> was born at the beginning of the nineteenth century in the village of Laguiole, on the Aubrac plateau.<br data-start=\"502\" data-end=\"505\">Its invention is attributed to <strong data-start=\"535\" data-end=\"558\">Pierre-Jean Calmels<\/strong>, creator of the <strong data-start=\"584\" data-end=\"598\">forced notch<\/strong> mechanism, which has become the technical signature of Laguiole.<\/p><p data-start=\"644\" data-end=\"776\">Since 1829, this folding knife has embodied <strong data-start=\"686\" data-end=\"721\">French cutlery know-how<\/strong>, artisanal innovation and family transmission.<\/p><h2 data-start=\"783\" data-end=\"837\">  1827-1829: the creation of the Laguiole knife<\/h2><p data-start=\"839\" data-end=\"942\">Between <strong data-start=\"845\" data-end=\"861\">1827 and 1828<\/strong>, Pierre-Jean Calmels (born in 1813) worked in the family inn in Laguiole.<\/p><p data-start=\"944\" data-end=\"1102\">A customer shows him a Spanish knife, the <strong data-start=\"989\" data-end=\"999\">Navaja<\/strong>.<br data-start=\"1000\" data-end=\"1003\">Seduced by its folding principle, he imagined a version adapted to the needs of the farmers of Aubrac.<\/p><p data-start=\"1104\" data-end=\"1189\">With the help of his uncle <strong data-start=\"1129\" data-end=\"1139\">Belmon<\/strong>, a locksmith, he developed a new mechanism.<\/p><p data-start=\"1191\" data-end=\"1247\">\u27a1\ufe0f <strong data-start=\"1194\" data-end=\"1247\">In 1829, the Laguiole knife with a forced notch was born.<\/strong><\/p><p data-start=\"1249\" data-end=\"1356\">At only 16 years old, Pierre-Jean Calmels became
